Special K Bars

This is another one of Grandma Jensen's recipes.  She made these for many family gatherings.

12 cups (1 12 oz box) of Special K
2 cups sugar
2 cups corn syrup (16 oz bottle)
2 cups (18 oz jar) peanut butter
2 cups peanuts
1 cup coconut
12 oz chocolate chips
10 oz butterscotch chip

Mix special K, peanuts, and coconut in a large bowl.  Heat sugar and Karo slowly to boiling, then add peanut butter  and stir till melted.  Add to special K and mix till blended.  Press into greased cookie sheet.  Melt chips and spread over the top of the bars.  Let cool and set.

  1. I'm just adding a bit of wisdom to this recipe, use it if you like, or keep it as is. First, I use 12oz of both chocolate chips and butterscotch chips. The extra 2 ounces of butterscotch help make the topping spread nicely over the top, and prevents pockets or holes in the finished bars. Also, I love to substitute cashews for peanuts. I like the difference in texture, or something. Maybe it's just that I like cashews more. I'm VERY liberal with the coconut as well. When heating the sugar and Karo, you basically just want to make sure that the mixture goes clear, and you don't want to over do the cooking time, it will make the bars hard when cooled. Finally, remove your pan from the heat source before adding the peanut butter. These are awesome tasting, easy to make, and will never go bad (they get eaten too quickly).
